And the sickness prevails...
I hope everyone had a fantastic weekend! Mine was not so fabulous. Thursday evening I began to feel sick and by Friday I felt as though I had been hit by a bus. Let me preface this with the fact that I've been sick, fighting a nasty sinus infection since the Sunday before Christmas! I went to the dr and got an antibiotic and had taken the last dose last Saturday. I prayed I was done being sick, but no such luck! I went back to the dr on Friday and the sinus infection is back on top of a double ear infection (I never had one as a kid but 2 as an adult!) and a nasty, dry, barky cough. Needless to say I have more meds but I'm still feeling rather blah. I will be staying home again tomorrow to ell knock this! What's been hard is that a lot of the staff and kiddos have been fighting this and we're just cycling it back and forth. Sounds great, huh? I don't recall feeling this crappy since having mono senior year of high school. So I have spent my weekend working in homework and trying to sleep (let's put it this way, I coughed so much last night that I couldn't sleep even with taking an ambien! No bueno!). The overall week wasn't bad , classes went well, and my meals were yummy :) It sucks that i was ill this weekend since the bf was in town but it was still so great getting to see him! I just hope I didn't get him sick! Now I need to drag my sick behind up and get to the grocery store so I have food to eat! Plus I should probably finish some of my homework...

Happy Hump Day!
Hump day is one of my favorite days and it should be celebrated accordingly! No, not that way! Look at the week as a hill and Wed is the hump of the hill. We've made the upward climb and reached the summit. The rest of the week should be downhill from here as the weekend nears! So far it's been a rather stressful week at work, so I am rather thankful that there are only 2 more days left. Hopefully the kiddos rest this weekend and come back in a better mood! On a positive note, I had my first Bio lab on Monday. It went well and I'm surprisingly excited for it! I think my classes this semester will go pretty smoothly. The hardest part will be getting all of the human biology stuff down!
My highlight of today? I splurged at taco bell and it was fantastic! After work I went to the gym, hit the treadmill at a nice walk while knocking out some good ole American Govt reading (zzzzzz....). I entered my workout in and was pleasantly surprised that today I had earned an extra 400 cals on Myfitnesspal through my workout and my constant walking and lifting 30lbs at work! How to spend my extra cals? With a delicious nacho cheese chalupa! I was rather excited and it was wonderful! It's nice to indulge now and then :) Have any of you heard of Myfitnesspal? If not, look it up! I highly recommend it! Off to class to get all smart and stuff! Toodles!

This Week's Eats
Since I work 5 days a week with 3 nights of classes, I really don't have much time to cook my meals. I could resort to fast food but that is not a choice in my opinion! I spend my Sunday's cooking to stock up on the weeks meals so I can pack my lunch and dinner on class days! This week I've got 3 different meals lined up. 1 was Pinterest inspired and the other 2 came from a blog I found through Pinterest. I have tweaked them a bit to make them my own (you'll find I do that a lot!).
Recipes to come later.
Baked Tilapia & Baked Potato Casserole
Potato & Leek Soup
Spaghetti and Quinoa Meatballs
Food for thought: Do you have any favorite recipes you've found on Pinterest?

Back to school, Back to school
I started my first week of classes last week. This is a huge deal for me. I am completely switching path of study. All through high school I was dead set on becoming an elementary school teacher. I spent 3.5 years at Truman State University working towards that goal. Now I'm not trying to knock Truman, as it's a great school, but it was an awful school for me. I just wasn't happy there with the town or the school and 3.5 years in I left. I've been a working girl ever since. I've been a lead preschool teacher in 2 year-old rooms for nearly 2 years now. As much as I love my job and kiddos I spend my day with, I realized I would loose my sanity if I spent the rest of my life teaching! Well crap. What do I do now? In all my years of wanting to be a teacher, the distant second profession was an OB/L&D Nurse. I had always dismissed nursing because I "couldn't do all the science that would be involved". What a lame, cop-out excuse! Needless to say, I have chosen to go into Nursing! I have been so excited since I made this decision. Since I'm starting from scratch and paying for school myself, it's the com co for me to get prereqs out of the way while I start my search for nursing school! I'd love to get into L&D, Nursery, or NICU once I'm certified! So here goes the first semester of the rest of my life! SO STOKED!!!! :)
New Year, New Me
Allow me to introduce myself. I am Stephanie, a 24 year-old student/preschool teacher living in the good 'ole STL. Why am I blogging you ask? That's a great question! I have labeled this year "New Year, New Me". This year will mark some big changes in my life. While working full-time, I decided to go back to school (I chose to start over completely. More on that later.). I have made a goal to live a healthier lifestyle. I intend to use this blog to help hold myself accountable for my goals. This is a place to share my achievements as I progress in school and a healthier lifestyle. This is a place to vent frustrations after a long day. This is a place to share silly little things like an awesome new recipe I tried that everyone else must try! I hope you'll enjoy my musings about this Silly Little Thing Called Life :)
